These are two dishes from this weeks Personal Medical Nutrition Cooking menu.  The menu was designed to accommodate a consistent carbohydrate diet in addition to controlling fat, cholesterol, sodium and calories.

Second Image: Healthy Pizza

Other menu items included:

Peppered pork tender loin with a dirty rice and vegetable dish

Marinated grilled chicken breast with grilled mango, a vegetable heavy garlic and rosemary rice pilaf

Pork stir fry with a mixed field green salad, homemade whole wheat croutons and homemade citrus dressing

Chicken and vegetable pasta with whole grain roll and a mixed vegetable sauté
