Saturday, January 5th was the Pittsburgh Marathon Kick Off Training Run.  The turnout was great despite the freezing temps.  I hope everyone enjoyed the whole grain banana pancakes.  I have never made so many pancakes.

Recipe:

2 cups whole grain flour

2 large eggs

2 cups skim milk

1 T sugar

4 tsp baking powder

1/2 cup mashed banana

1 tsp vanilla extract

1/4 tsp salt

Beat eggs til foamy, then add in the rest of the ingredients and mix til smooth and evenly combined.  Recipe makes about 30, 3-4 inch pancakes.  These pancakes are great start to a pre or post workout meal.  Three pancakes has about 130 calories, 24 grams of carb, 6.2 grams of protein, and 1.6 grams of fat.  Feel free to add berries and or yogurt
