Recently I have become more involved with the Dick’s Sporting Goods Pittsburgh City Marathon. I am very fortunate to work on the Kids of Steel Program with another dietetic professional as well as become the dietitian for the Steel City Road Runners (SCRR). I am excited for all that I am going to see, do, and learn over the next year. At request of the Steel City Road Runners, here are the links to the recipes for the Pumpkin Oatmeal and Granola recipes and the salsa used on the hot dogs.  Also, below are the recipes for the Greek Burgers and Tzatziki Sauce.

 

Cooking for athletes and other clients is definitely a favorite part of my job. It gives me the chance to experiment with food and get realtime feedback. For example, most of the recipes that I make for the SCRR use fruits and vegetables in ways or in greater amounts than typically while still achieving pre and post workout nutritional needs.

Sure we can have a hot dog, lets just make it better with some tomato and cucumber salsa

 

 

Greek Burger

Ingredients:

One pound ground pork

1/3 cup onion

1/3 cup broccoli

1/3 cup beans. If canned, drain and rinse them

(any type will work, I used Great Norther Beans)

1/3 cup cauliflower

One large egg

1/4 tsp salt

1 tsp black pepper

1 tbsp each smoked paprika, and curry

1/3 cup crumbled fate cheese.

Instructions:

Combine ingredients, mix til even. Shape burgers, cook to desired doneness and top with tzatziki sauce.

Makes 4-5 burgers

 

 

Tzatziki Sauce

Great for gilled meats or any spicy foods.

Ingredients:

1/2 cup finely chopped cucumber. Remove the skins. I leave the skin on the cucember.

4 oz low fat plain greek yogurt

1 tsp olive juice

1 tsp lemon juice

Dash of salt

1/8 tsp pepper

As much dill as you can handle, start with 2 tbsp

One clove mined garlic, 1 tsp garlic powder

Instructions:

Combine ingredients, chill and serve on Greek Burger, grilled lamb, or other meats
