This is my answer when clients ask about pizza. Plus it is a great dish for parties.
- Ingredients:
- 6 inch whole grain pita shell
- 1/4 c hummus
- 3/4 cup sauteed vegetables of your choice. The featured pizza has onions, red peppers, carrots, yellow squash, button mushrooms, broccoli, and fresh chopped spinach.
- 1 tbsp fete cheese
- Instructions:
- Spread hummus to cover pita leaving a “crust” area.
- Spread sauteed chopped vegetables over hummus, placing leafy greens on first.
- Bake at 450 F near top of oven for about 5-10 minutes or until pita begins to toast
- Sprinkled with feta cheese and enjoy.
Great for kids. They can build their own.
