This is my answer when clients ask about pizza.  Plus it is a great dish for parties.

  •  Ingredients:
  1. 6 inch whole grain pita shell
  2. 1/4 c hummus
  3. 3/4 cup sauteed vegetables of your choice.  The featured pizza has onions, red peppers, carrots, yellow squash, button mushrooms, broccoli, and fresh chopped spinach.
  4. 1 tbsp fete cheese
  • Instructions:
  1. Spread hummus to cover pita leaving a “crust” area.
  2. Spread sauteed chopped vegetables over hummus, placing leafy greens on first.
  3. Bake at 450 F near top of oven for about 5-10 minutes or until pita begins to toast
  4. Sprinkled with feta cheese and enjoy.

Great for kids.  They can build their own.
