Ingredients

  • 3/4 cup cleaned, shredded carrots
  • 3/4 cup cleaned, shredded beats
  • 3/4 cup pealed, shredded kohlrabi
  • 1/4 cup fresh dill, chopped (when in season)
  • 3-5 tbsp rice wine vinegar, OR the zest and juice of a lemon or lime
  • 1/2 tbsp olive oil
  • 1-2 tbsp honey

 

Instructions

  1. Using the larger holes of a cheese  grater, grate the carrots, beats, and  kohlrabi.
  2. Combine with vinegar, or lemon  or lime juice and zest, honey, olive  oil, and dill.
  3. Mix and serve or  chill in fridge for two hours.
  4. Makes  4 servings, about a half cup each.
