Ingredients
- 3/4 cup cleaned, shredded carrots
- 3/4 cup cleaned, shredded beats
- 3/4 cup pealed, shredded kohlrabi
- 1/4 cup fresh dill, chopped (when in season)
- 3-5 tbsp rice wine vinegar, OR the zest and juice of a lemon or lime
- 1/2 tbsp olive oil
- 1-2 tbsp honey
Instructions
- Using the larger holes of a cheese grater, grate the carrots, beats, and kohlrabi.
- Combine with vinegar, or lemon or lime juice and zest, honey, olive oil, and dill.
- Mix and serve or chill in fridge for two hours.
- Makes 4 servings, about a half cup each.
