Ingredients

  • ¾ Cup Eggplant
  • ¾ Cup Zucchini
  • ¾ Cup Summer Squash
  • ¾ Cup Onion
  • ¾ Cup Sweet Bell Peppers
  • ¾ Cup Carrots
  • ¾ Cup Green Beans
  • 2 Tablespoons Garlic (minced)
  • ½ Teaspoon Salt
  • 1 Teaspoon Pepper

 

Instructions

  1. Clean and chop all vegetables.
  2. In a large pan, heat all vegetables on med high heat.
  3. While heating, cover the pan to make use of the steam created so as to cook the vegetables with no oil.  Stir as needed.
  4. Add salt and pepper to taste.
  5. May be served hot or cold.
