Ingredients
- ¾ Cup Eggplant
- ¾ Cup Zucchini
- ¾ Cup Summer Squash
- ¾ Cup Onion
- ¾ Cup Sweet Bell Peppers
- ¾ Cup Carrots
- ¾ Cup Green Beans
- 2 Tablespoons Garlic (minced)
- ½ Teaspoon Salt
- 1 Teaspoon Pepper
Instructions
- Clean and chop all vegetables.
- In a large pan, heat all vegetables on med high heat.
- While heating, cover the pan to make use of the steam created so as to cook the vegetables with no oil. Stir as needed.
- Add salt and pepper to taste.
- May be served hot or cold.
