Ingredients
- 1.5 cups quinoa
- 3 cups water
- 1 cup each: Diced tomatoes, onion, zucchini, pattypans, and carrots
- 2 cups chopped swiss chard, with stems
- 3 cloves minced garlic
- 1 tbsp smoked paprika, cumin, & chilli power (add more spice if you like)
- 1/2 tsp salt
- 1 pound ground pork or chopped pork loin
Instruction
- In a large pot brown pork with spices on medium to medium high heat.
- As pork is about half way cooked add veggies and cook til carrots are slightly softened.
- Then add the quinoa and water, stir, cover, reduce heat and simmer for about 15 minutes or until quinoa is cooked.
- Serve and enjoy. Makes about 8 cups.
