Ingredients
- 1 cup plain yogurt
- Juice and zest of one lemon
- 1-8 inch zucchini, cut in thin, half circle slices, about 2 cups
- 2 ears of corn, corn cut from ear, about 2 cups
- 1 cup thinly sliced onion
- 3-4 leaves minced mint
- 1 tbsp sugar
Instructions
- Combine yogurt, lemon juice, lemon zest, mint, sugar and mix.
- Add vegetable, mix, chill, serve, and enjoy. Feel free to add in other vegetable.
- For every 4 cups vegetable use 1 cup yogurt.
- Makes about 5 cups.
