Ingredients
- 3 cups rough chopped peaches (about 8-10 small peaches)
- 1/4 balsamic vinegar
- 2 tbsp sugar, brown or white
- 2 mint or basil leaves, cut chiffonade or minced
- 1 Angel Food Cake cut into 1 oz portions
Instructions
- Combine ingredients in a bowl, mix and let sit for 30 minutes.
- Grill pieces of the cake enough to make grill lines.
- Top cake with 2 tbsp balsamic macerated peaches and enjoy.
- Makes 3 cups macerated Peaches.
Notes:
Skin the peaches if you like. To do so score the peach like in the picture and use your fingers to pull away the skin. Raspberries or other soft fruits can replace or be used with peaches. The macerated fruit mix also goes great with pound cake, biscuits, or even ice cream.
Serving Size: 1 oz cake and 3 tbsp peaches
